11)  Turn off the oven and crack the door open slightly. Let the cheesecake cool in the oven for 30 minutes.


12)  Remove the cheesecake from the oven and run a sharp knife around the edges of the pan to loosen the cheesecake.


13)  Let the cheesecake cool to room temperature, then chill in the refrigerator for at least 4 hours, or overnight.


14)  Before serving, run a sharp knife around the edges of the pan again and remove the springform ring.


15)  Slice and serve chilled. Optional toppings include whipped cream, fresh fruit, or caramel sauce.
